Instructions

- After 10 minutes drain water from the zucchini by squeezing it with your hand and discarding liquid.

- Stir in ½ cup almond flour until fully combined.½ cup almond flour
- Preheat a large skillet to medium-high heat. Add 1 tablespoon butter. Using an ice cream scoop or large spoon, scoop one spoonful of batter into the pan for each fritter, enough to cook 3 fritters at a time. Cook 2 to 3 minutes per side until golden, crispy and cooked through.1 tablespoon butter
