In a large bowl, combine 3 shredded zucchini and 1 teaspoon sea salt. Set aside for 10 minutes.

After 10 minutes drain water from the zucchini by squeezing it with your hand and discarding liquid.
In another bowl, whisk 2 eggs and combine with shredded zucchini, ¼ cup feta cheese, ¼ cup mozzarella cheese, 2 cloves garlic, 2 green onions, and ¼ teaspoon ground black pepper.

Stir in ½ cup almond flour until fully combined.

Preheat a large skillet to medium-high heat. Add 1 tablespoon butter. Using an ice cream scoop or large spoon, scoop one spoonful of batter into the pan for each fritter, enough to cook 3 fritters at a time. Cook 2 to 3 minutes per side until golden, crispy and cooked through.
