Instructions
- In large bowl, combine 3 shredded zucchini and 1 teaspoon sea salt. Set aside for 10 minutes.3 shredded zucchini, 1 teaspoon sea salt
- After 10 minutes drain water from zucchini by squeezing it with your hand and discarding liquid.

- Preheat large skillet to medium-high heat. Add 1 tablespoon butter.1 tablespoon butter
- Scoop one spoonful of batter into pan for each fritter, enough to cook three fritters at a time. Cook 2 to 3 minutes per side until golden, crispy and cooked through.
