Instructions
- Preheat the oven to 400 degrees F / 204 degrees C.
- Halve 3 zucchinis, place halves on a baking sheet, then carve out the flesh from the middle of the zucchini and place in a bowl.3 zucchinis

- Bake for 10 minutes.
- In the bowl with the carved-out zucchini flesh, add 6 ounces cherry tomatoes, 3 green onions, 1/2 cup feta cheese, 8 mint leaves, 1 tablespoon lemon zest and 1ยฝ tablespoon lemon juice.
