Preheat the oven to 400 degrees F / 204 degrees C.
Halve 3 zucchinis, place halves on a baking sheet, then carve out the flesh from the middle of the zucchini and place in a bowl.

Line up the carved-out boats on the sheet, pour 3 tablespoons olive oil over top and season with kosher salt and pepper to taste, and dried oregano to taste.

Bake for 10 minutes.
In the bowl with the carved-out zucchini flesh, add 6 ounces cherry tomatoes, 3 green onions, 1/2 cup feta cheese, 8 mint leaves, 1 tablespoon lemon zest and 1½ tablespoon lemon juice. Mix together.

Remove boats from the oven, use mixture to fill boats generously.
Bake for an additional 10 minutes.
