Ingredients

Tomato Sauce

  • 14 ounces pureed tomatoes (1can)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Freshly ground black pepper to taste
  • 1/4 cup extra virgin olive oil

Cabbage Cups

  • 1 pound ground beef
  • ¾ pound ground pork
  • 1 cup cauliflower rice
  • ½ teaspoon thyme chopped
  • Salt and freshly ground black pepper to taste
  • 12 cabbage leaves

Instructions

Tomato Sauce

  • Preheat oven to 375 degrees F / 190 degrees C.
  • Process 14 ounces pureed tomatoes, 1 tablespoon apple cider vinegar, 1 teaspoon red pepper flakes, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon dried oregano in a blender. Season with Freshly ground black pepper to taste.
  • In a large deep skillet (or large pot) heat 1/4 cup extra virgin olive oil.
  • Add pureed tomato sauce, bring to a simmer, then lower to medium-low and simmer for 20 minutes until slightly thickened.

Cabbage Cups

  • In a large bowl, combine ½ cup of tomato sauce with 1 pound ground beef, ¾ pound ground pork, 1 cup cauliflower rice, and ½ teaspoon thyme. Season with Salt and freshly ground black pepper to taste.
  • Evenly pack a 9 x 9-inch baking dish with the filling and spoon tomato sauce over the top.
  • Bake for 45 to 55 minutes, until meat is cooked through and internal temperature reaches 150 degrees F / 66 degrees C.
  • Fill 12 cabbage leaves evenly with filling.
  • Garnish with more thyme before serving.
