Ingredients

For gratin

  • 1 cup cauliflower florets bite-size pieces
  • 1 cup broccoli florets bite-size pieces
  • 1 cup oyster mushrooms
  • 2 ounces cheddar cheese
  • ½ cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For flank steak

  • 8 ounces flank steak
  • ½ teaspoon salt
  • 1 pinch pepper
  • 1 teaspoon fresh thyme
  • 2 tablespoons olive oil

For sauce

  • ½ cup heavy cream
  • 1 ounce cream cheese
  • 1 tablespoon coconut amino
  • ½ teaspoon black pepper

Instructions

Gratin:

  • Preheat oven to 350 degrees F. Line 4 x 8” baking pan with parchment.
  • In medium bowl mix 1 cup cauliflower florets, 1 cup broccoli florets, 1 cup oyster mushrooms, 2 ounces cheddar cheese, ½ cup heavy cream, 1 teaspoon salt and ½ teaspoon black pepper.

  • Pour gratin mixture into lined baking pan. Bake until golden brown.

Steak:

  • Season 8 ounces flank steak with 1 teaspoon fresh thyme, ½ teaspoon salt and 1 pinch pepper. Place medium skillet over medium high heat.

  • Add 2 tablespoons olive oil and sear steak on both sides.

  • Remove steak from heat once you have reached your desired temperature and save pan with oil and juices.

Pan Sauce:

  • To steak pan add ½ cup heavy cream, 1 ounce cream cheese, 1 tablespoon coconut amino, and ½ teaspoon black pepper over low heat.

  • Cook to reduce by half.
