Ingredients

For gratin

  • 1 cup cauliflower florets bite-size pieces
  • 1 cup broccoli florets bite-size pieces
  • 1 cup oyster mushrooms
  • 1 cup cheddar cheese
  • ½ cup heavy cream
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ cup almond flour

For flank steak

  • 8 ounces flank steak
  • ½ teaspoon sea salt
  • 1 pinch black pepper
  • 1 teaspoon fresh thyme
  • 2 tablespoons olive oil

For sauce

  • ½ cup heavy cream
  • 1 ounce cream cheese
  • ½ teaspoon black pepper
  • 1 tablespoon coconut amino

Instructions

Gratin:

  • Preheat oven to 350 degrees F / 177 degrees C. Line 4 x 8” baking pan with parchment.
  • In medium bowl mix 1 cup cauliflower florets, 1 cup broccoli florets, 1 cup oyster mushrooms, 1 cup cheddar cheese, ½ cup heavy cream, 1 teaspoon sea salt ½ teaspoon black pepper and ½ cup almond flour.

  • Pour gratin mixture into lined baking pan. Bake for 15 to 18 minutes or until golden brown.

Steak:

  • Season 8 ounces flank steak with ½ teaspoon sea salt, 1 pinch black pepper, and 1 teaspoon fresh thyme.

  • Add 2 tablespoons olive oil to medium-high heat saucepan, then sear steak on both sides.

  • Remove steak from heat once desired temperature is reached. Save pan with oil and juices.

Pan Sauce:

  • To steak pan add ½ cup heavy cream, 1 ounce cream cheese, ½ teaspoon black pepper and 1 tablespoon coconut amino over low heat.

  • Cook to reduce by half.
