These Vegan Tofu Peanut Butter "Sandwiches" transform simple tofu into a creamy, nutty bite. Ready in just 15 minutes, they’re an easy way to turn basic ingredients into a decadent treat.
Instructions
Tofu
- Slice 4 ounces tofu lengthwise into four even pieces.4 ounces tofu, 2 tablespoons avocado oil
- Add 2 tablespoons avocado oil to pan and heat over medium heat.
- Add tofu to heated pan.
- Cook each side of tofu for 4 to 5 minutes.
- Coat one side of each piece of tofu in 3 tablespoons peanut butter.3 tablespoons peanut butter
- Top with 2 tablespoons sunflower seeds.2 tablespoons sunflower seeds
Sautéd vegetables
- Slice 1 mushroom and 7 asparagus.
- In pan over medium heat, add 1 tablespoon olive oil . Sauté vegetables for five minutes.
- Arrange vegetables on plate, then top with tofu peanut butter "sandwiches".
- Serve and enjoy!
