Slice 8 pieces okra crosswise on a slight diagonal.

Grind 2 cups pork rinds in food processor or blender.

Prepare a breading station with three shallow bowls: place ½ cup coconut flour in the first, beaten 2 eggs in the second, and 2 cups pork rinds in the third.

Fully coat each okra piece in coconut flour, then beaten eggs, then ground pork rinds.

In medium saucepot, add 2 cups avocado oil. Bring oil up to 350 degrees F / 177 degrees C.

Add okra to hot oil in batches. Fry 1 to 2 minutes until golden and crispy. Remove with slotted spoon; season with salt immediately.

Serve with organic ranch dressing or any dipping sauce of your choice.
