Ketogenic Fried Okra

Ketogenic Fried Okra

Per serving: 200 calories, 10 g protein, 2 g carbohydrates, 14 g fat

Ingredients

Okra - 6-8 pieces

Pork Rinds - 2 cups

Eggs - 2 large

Coconut Flour - 1/2 cup (for breading)

Oil - about 2 cups (for frying)

Directions:

Cut okra on a bias (slanted).  

Grind pork rinds in a food processor or blender.

For perfect breading, set up a breading station: coconut flour, beaten eggs, ground pork rinds.

First, dip the okra in coconut flour.

Dip in beaten eggs. 

Finish in pork rinds.

Bread all okra.

In a saucepot, add about 2 cups of oil.  Make sure that you use an oil that has a high smoke point, so that it doesn't burn.  Bring the oil up to 350 degrees over medium heat.  Use a meat thermometer to check the temperature.

Slowly drop okra into hot oil.  Let cook for 1-2 minutes.  Okra will be golden and crispy! 

Salt heavily and immediately, when you pull it out of the oil.  The hot oil will help the salt to stick.  If you salt the okra when it's not hot, the salt will not stick.

Enjoy with organic ranch dressing or any dipping sauce of your choice!
