Ingredients

  • ½ head cauliflower
  • ¼ onion
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • cup coconut milk
  • Salt and pepper to taste
  • 1 tablespoon seeds
  • 1 tablespoon parsley chopped

Instructions

  • Cut up ½ head cauliflower into small florets and chop ¼ onion.

  • In a sauce pot, add 1 tablespoon olive oil and onions. Cook on low for 5 to 7 minutes.

  • Add 1 cup vegetable broth and cauliflower florets. Cook until cauliflower is soft.

  • In a heat-safe blender, add cauliflower, onion, and broth mixture. Blend on high.
  • Add ⅓ cup coconut milk and continue to blend until desired consistency.

  • Season with Salt and pepper to taste.
