Did you have any problems with your weight or health before going on keto?
I was diagnosed with a metabolic disease about 13 years ago and put on a long list of medications. I had blood sugar issues that only got worse after my father died, and they were not improving.
How did you discover keto?
I knew I needed to do something, and I knew what it was: keto. My friend George and my son Paul had both told me about it. I also knew it would not be a temporary diet but something I needed to do for good, for my health. I didn’t want to go blind or lose my feet or kidneys.
I began to learn everything I could about keto, and with the support of my diabetes group (which made me moderator two months later), I did it!
How has your health improved since you started keto?
I lost 75 lbs. and am down to 105 (I’m 5′ tall). I’ve stayed at that weight for the last 11 months. I have been learning new recipes and loving it!
Four months into it, my triglycerides improved! I also had unexpected results: My white blood cell count was normal! The same was true for my calcium! I got off the diabetic medication.I have lots of energy and walk twice a day, every day. I do not feel deprived in the least. I can watch others eating whatever they choose, and Ieat what I know is healthy for me. If I want pizza, I make a keto one. I am so thankful for this way of life!
How does an average day of eating/fasting look for you on keto?
The first thing I did was clean out my cupboards, freezer, and refrigerator. My cupboards were now bare and echoed with emptiness. I started out eating salads and meat, and little by little began building my collection of what I called “weird things” (things I’d never heard of, like erythritol) and trying new recipes. I learned not to snack and went from three meals to two a day.
Any other details you want to share?
People ask me all the time if this is hard. I can truthfully answer, “No, I love it!” I find it sustains me much better, and it’s guilt-free!
I also love helping others who are interested in controlling their diabetes find their way.
Before all of this, I lost my sweet husband 16 years ago to a heart attack with diabetic complications. I hadn’t allowed sugar in the house. I followed what the doctors and dietitians told us, and we took diabetic classes, but it hadn’t helped. I’d tried whole grain, low-fat, vegetarian, you name it, but none of it helped my diabetes. Keto has. It’s hard to argue with the results!
I realize everyone finds their own way, but this is what I have found works for me, and I’m very grateful for it!
