How did you discover keto? 

I discovered Dr. Berg’s content on YouTube while looking for a way to lose weight without medication or surgery. His videos on intermittent fasting and ketoopened my eyes to a completely different way of eating. I started combining OMAD (one meal a day) with his teachings and never looked back. 

What did your diet look like prior to adopting keto? 

Before keto and OMAD, I was eating 3 to 4 meals a day with no real structure. Fast food, heavy carbs, rice, bread, and processed snacks. I was a truck salesman on the road constantly, eating whatever was convenient; breakfast tacos, fast food burgers, rice, tortillas, chips, and whatever I could grab on the road between truck deals. I never thought about what I was putting in my body. 

I felt sluggish, I was tired all the time, my joints ached, and I was on medication. Food controlled me instead of the other way around. I just accepted that’swhat getting older felt like. I had no idea that food was doing it to me. 

Did you have any problems with your weight or health before going on keto? 

At my heaviest I was 303 lbs. I had blood pressure and cholesterol issues, leg cramps that kept me up at night, low energy, and joint pain. Sometimes I would wake up in the middle of the night, choking on acid reflux. My wife Jennifer suffered from chronic migraines for years. I was 55 years old and felt 80. I knew something had to change, but I didn’t know where to start. 

How has your health improved since you started keto? 

I lost 57 lbs. and have kept it off for 2 years with no GLP medications, no gym, and no surgery. My blood pressure is now normal, and my cholesterol is under control. My leg cramps completely disappeared after adding magnesium and Celtic salt with lime to my water—a tip I learned directly from Dr. Berg. 

I have more energy at 58 than I did at 40.  

How does an average day of eating/fasting look for you on keto? 

I practice OMAD—one meal a day fasting, or at least an 18-hour fast. I fast from my last meal until the next day, typically eating between 1 PM and 3 PM. My meal consists of a quality protein; steak, chicken, shrimp, or fish, with non-starchy vegetables like broccoli, zucchini, and mushrooms.  

I add Celtic salt with lime to my water throughout the day for electrolytes and minerals. No snacking. No breakfast. No second meal. Just one clean plate and plenty of water. I’ve been doing this for over 2 years, and it’s become second nature. 

Does exercise play a role in your success on keto? If so, how? 

Honestly, no gym, no formal workout program. I lost 57 lbs. and have kept it off for 2 years with just daily walking and a standing desk. My job keeps me moving—I walk a lot every day, selling commercial trucks. 

 I added a standing desk to cut down on sitting time. That’s it. No weights, no cardio machines, no trainer. The results came entirely from OMAD and cleaning up my diet. Dr. Berg taught me that what you eat matters far more than how much you exercise. He was right. 

If you could offer advice to someone starting keto, what would you say? 

Start simply. Don’t overthink it. Cut the sugar, cut the bread, and cut the rice. Eat real protein and real vegetables. Add Celtic salt with lime to your water every day; it supports cravings and leg cramps.  

Watch Dr. Berg’s videos on intermittent fasting before you start. And be patient. The first two weeks are the hardest. After that, your body figures it out, and you wonder why you ever ate any other way.  

Your plate got you here, and your plate will get you out. 

What is your favorite keto recipe? 

My go-to is simple: grilled steak, shrimp, or chicken with broccoli and zucchini, seasoned with Celtic salt and pepper. No sauces, no marinades with hidden sugar. Just clean protein and clean vegetables. I eat it at a Japanese steakhouse, or I grill it myself at home. Same meal. Every day. And I never get tired of it.

I’m a 58-year-old truck salesman from Pasadena, TX, who discovered Dr. Berg on YouTube, and it literally changed my life. I also run a YouTube channel called AI after 50 with Pops, where I document my journey using AI technology to help seniors realize they can do this too.
