Keto Lemon Cream Artichoke

SERVES: 4

INGREDIENTS:

  • 1¾ lbs / 5897 mL canned artichokes, drained 
  • ¾ cup / 180 mL heavy whipping cream 
  • ¼ cup / 62 mL lemon juice, freshly squeezed
  • 1½ cups / 387 mL Parmesan cheese, grated 
  • 1 tsp / 5 mL black pepper, ground 
  • 1 Tbsp / 15 mL fresh thyme

DIRECTIONS:

  1. Preheat the oven to 350 degrees F / 176 degrees C.  

  2. Place artichokes in a baking pan. 

  3. Pour cream over artichokes. Add lemon juice over cream and artichokes. Sprinkle Parmesan evenly on top. 

  4. Top dish evenly with thyme and black pepper. 

  5. Bake for 25 to 30 minutes or until golden brown and the dish has thickened. Serve hot.
