Instructions
- Chop 2 slices bacon.2 slices bacon
- In fry pan over low heat, cook bacon for 10 minutes to render fat.
- Add 3 cups collard greens and 1 cup chicken broth. Cook on medium-low for 15 minutes.1 cup chicken broth, 3 cups collard greens
- Remove greens and bacon from pan. Leave bacon fat in pan.2 slices bacon
- Over medium-low heat, melt 1 tablespoon butter in pan.1 tablespoon butter
- Beat 3 eggs and pour into pan. Cook for 5 to 10 minutes.3 eggs
- Add cooked collard greens and bacon onto one side of cooked egg. Fold other side over to cover filling. Slide omelet out of pan onto plate.3 cups collard greens, 2 slices bacon, 3 eggs
- Serve and enjoy.
