Collard Greens and Bacon Omelette
Omelettes are awesome and can be very nutrient dense! This omelette is loaded with bacon and greens. The perfect keto combination!
TOTAL TIME: 30 minutes
Collard Greens - 3 cups
Bacon - 2 slices
Chicken Broth - 1 cup
Eggs - 3 eggs
Butter -1 tablespoon
Chop 2 slices of bacon.
Cook on low for 10 minutes to slowly render out all of the bacon fat.
Add 3 cups of collard greens.
Add 1 cup chicken broth.
Cook on medium-low for 15 minutes.
Remove greens and bacon from pan. Leave bacon fat in pan.
Over medium-low heat, add 1 tablespoon butter to pan.
Beat 3 eggs. Add to pan over medium-low heat.
Cook for 5-10 minutes. Cover pan to help the eggs cook all the the way.
Build your omelette.
