Instructions
- Preheat oven to 350 degrees F / 176 degrees C. Line 4 x 8-inch baking pan with parchment paper.
- Combine ยฝ cup heavy whipping cream, ยผ teaspoon xanthan gum, ยฝ teaspoon garlic powder, ยฝ teaspoon sea salt, ยผ teaspoon black pepper and 1 teaspoon oregano in medium bowl and mix well. Set aside.
- Layer ingredients in pan in repeating layers. Start with portion of 4 cups zucchini, ยผ cup onion, and 1ยฝ cups pepper jack cheese. Repeat this sequence until all ingredients are finished. Ending with cheese on top.
- Pour wet mixture over zucchini layers and bake for 20 minutes or until golden brown.
