Ingredients

  • ½ cup heavy whipping cream
  • ¼ teaspoon xanthan gum
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano
  • 4 cups zucchini sliced
  • ¼ cup onion thinly sliced
  • cups pepper jack cheese

Instructions

  • Preheat oven to 350 degrees F / 176 degrees C. Line 4 x 8-inch baking pan with parchment paper.
  • Combine ½ cup heavy whipping cream, ¼ teaspoon xanthan gum, ½ teaspoon garlic powder, ½ teaspoon sea salt, ¼ teaspoon black pepper and 1 teaspoon oregano in medium bowl and mix well. Set aside.
  • Layer ingredients in pan in repeating layers. Start with portion of 4 cups zucchini, ¼ cup onion, and 1½ cups pepper jack cheese. Repeat this sequence until all ingredients are finished. Ending with cheese on top.
  • Pour wet mixture over zucchini layers and bake for 20 minutes or until golden brown.
  • Serve and enjoy!
