Ingredients

  • ½ cup coconut flour
  • 1 tablespoon baking powder
  • 1 tablespoon psyllium husk powder
  • ½ tablespoon sea salt
  • 5 eggs large
  • 2 tablespoons butter melted, cooled
  • ¼ cup olive oil
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon cardamom
  • 1 cup walnuts toasted, chopped
  • ½ cup boiling water

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In a bowl, combine ½ cup coconut flour, 1 tablespoon baking powder, 1 tablespoon psyllium husk powder and ½ tablespoon sea salt.

  • Add 5 eggs, 2 tablespoons butter and ¼ cup olive oil. Stir to combine. Add 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon cardamom, and toasted 1 cup walnuts. Stir until fully incorporated.

  • Add half of the ½ cup boiling water and stir until all water is absorbed. Add remaining water and stir again until all water is absorbed. Let dough rest 5 minutes.

  • Line a baking sheet with parchment and dust lightly with coconut flour.
  • Transfer dough to parchment-lined pan. Dust the top of the dough with more coconut flour. Form dough into a rectangular shape, about 12 x 3 inches. Make a few half-inch deep slices on the top of the dough.
  • Bake 35 to 45 minutes until bread is firm and evenly browned.
