There’s nothing cozier than a warm loaf filled with fragrant spices and crunchy walnuts. This Keto Walnut Spice Loaf is tender, slightly sweet, and perfect with morning coffee or an afternoon tea.
Instructions
- Preheat oven to 350 degrees F / 177 degrees C.
- In bowl, combine ½ cup coconut flour, 1 tablespoon baking powder, 1 tablespoon psyllium husk powder and ½ tablespoon sea salt.½ cup coconut flour, 1 tablespoon baking powder, 1 tablespoon psyllium husk powder, ½ tablespoon sea salt
- Add 5 eggs, 2 tablespoons butter and ¼ cup olive oil. Stir to combine. Add 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon cardamom, and toasted 1 cup walnuts. - Add half of ½ cup boiling water and stir until all water is absorbed. Add remaining water and stir again until all water is absorbed. Let dough rest for five minutes.½ cup boiling water
- Line baking sheet with parchment and dust lightly with coconut flour.
- Transfer dough to parchment-lined pan. Dust top of dough with more coconut flour. Form dough into rectangular shape, about 12 x 3 inches. Make few half-inch deep slices on top of dough.
- Bake 35 to 45 minutes until bread is firm and evenly browned.
