Ingredients

  • 1 tablespoon butter
  • 1 tablespoon garlic minced
  • 1 cup coconut flour
  • 1 cup mozzarella cheese shredded
  • 1 teaspoon baking soda
  • ¼ teaspoon white pepper
  • 1 teaspoon sea salt
  • 2 teaspoons shredded coconut unsweetened
  • 3 eggs large
  • 1 tablespoon green onions sliced
  • Olive oil cooking spray

Instructions

  • Preheat a small waffle iron on medium heat setting.
  • Heat a small saute pan on medium heat for 2 minutes. Add 1 tablespoon butter and melt. Add 1 tablespoon garlic and brown, stirring frequently to prevent burning. Remove from heat and place in a small bowl. Set aside to cool.

  • In a medium-sized bowl, combine 1 cup coconut flour, 1 cup mozzarella cheese, 1 teaspoon baking soda, ¼ teaspoon white pepper, 1 teaspoon sea salt and 2 teaspoons shredded coconut. Stir together to incorporate. Add 3 eggs, browned garlic and 1 tablespoon green onions. Stir to incorporate. The batter will be slightly dry.

  • Spray waffle iron liberally with Olive oil cooking spray. Add ½ cup of batter (or appropriate measurement for waffle iron model). Spread the batter evenly on the waffle iron and cook until crisp. Repeat until all waffles are cooked.
