Preheat small waffle iron on medium heat setting.
Heat small sauté pan on medium heat for two minutes. Add 1 tablespoon butter and melt.

Add 1 tablespoon garlic and brown, stirring frequently to prevent burning. Remove from heat and place in small bowl. Set aside to cool.
In medium-sized bowl, combine 1 cup coconut flour, 1 cup mozzarella cheese, 1 teaspoon baking soda, 1 teaspoon sea salt, ¼ teaspoon white pepper, and 2 teaspoons shredded coconut.

Add 3 eggs, browned garlic and 1 tablespoon green onions. Mix until well incorporated.
Spray waffle iron liberally with olive oil cooking spray. Add ½ cup of batter and spread evenly on waffle iron and cook until crisp. Repeat until all waffles are cooked.
