Keto ladyfingers

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

In a large mixing bowl whip 4 egg yolks with 1 cup erythritol and 1 teaspoon vanilla extract until yolks become a pale yellow in color. Set aside.

In another bowl whip 4 egg whites and 1 teaspoon baking powder until stiff peaks form.

Fold together yolks, whites, 1¼ cup almond flour, and 4 ounces unsalted butter.

Spread evenly over the lined baking tray. Bake for 10 to 12 minutes and let cool.
Mascarpone cheese

In a large bowl mix 10 ounces mascarpone cheese, 4 tablespoons erythritol, 2 cups whipped heavy cream and 1 teaspoon orange zest.
Assembly

Place half of the mascarpone mixture in the bottom of an 8 x 8 casserole dish and spread evenly.

Cut the ladyfingers into 3-inch strips and brush with 1 cup coffee. The more soaked the ladyfingers are the better. Place the soaked lady fingers in the casserole dish and cover with the remaining mascarpone mix. Spread evenly.

Sprinkle with 4 tablespoons cocoa powder and refrigerate for 3 hours before serving to allow the dish to set up.
