Ingredients

  • 1 tablespoon olive oil
  • 4 salmon filets skin on, scales removed
  • 2 teaspoons sea salt
  • ½ cup butter softened
  • 1 tablespoon Dijon mustard smooth
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill chopped

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Heat 1 tablespoon olive oil in a large pan on medium heat for 4 minutes. Season 4 salmon filets with 2 teaspoons sea salt. Place salmon in pan skin side down and sear for 3 minutes. Flip and sear for 3 additional minutes until both sides are crisp.

  • Place salmon on a 9 X 13 inch glass baking dish, reserve.
  • In a medium bowl place ½ cup butter, 1 tablespoon Dijon mustard, 1 tablespoon lemon juice, and 2 tablespoons fresh dill. Whisk until all ingredients are combined and chill for 10 minutes.

  • Top each portion of salmon with the butter mixture and bake for 8 to 15 minutes.
  • Cool for 3 minutes before serving.
