Instructions
For chimichurri sauce:
- In food processer combine ยฝ cup Italian parsley, ยฝ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ยฝ teaspoon chili flakes, ยฝ teaspoon sea salt and ยพ cup olive oil for chimichurri and blend well. For pork chops:
- Season 2 bone-in pork chops on both sides with ยฝ teaspoon sea salt, ยฝ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme and 1 teaspoon olive oil. Set aside.2 bone-in pork chops, ยฝ teaspoon sea salt, ยฝ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme, 1 teaspoon olive oil
- Heat large skillet over medium-high heat.
- Sear pork chops on each side until golden brown. Depending on thickness of chops, you might have to finish in oven.
- Cook until internal temperature is 160 degrees F / 71 degrees C.
