Instructions
For pork chops:

Season 2 bone-in pork chops on both sides with ½ teaspoon sea salt, ½ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme and 1 teaspoon olive oil. Set aside.

Heat a large skillet over medium high heat.

Sear pork chops on each side until golden brown. Depending on how thick your chops are, you might have to finish them in the oven.

Cook until internal temperature is 155 to 160 degrees F.
For chimichurri sauce:

In food processer combine ½ cup Italian parsley, ½ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ½ teaspoon chili flakes, ½ teaspoon sea salt and ¾ cup olive oil for the chimichurri and blend well. Incorporate olive oil ¼ cup at a time.
