Instructions
For pork chops:
- Season 2 bone-in pork chops on both sides with ½ teaspoon sea salt, ½ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme and 1 teaspoon olive oil. Set aside.2 bone-in pork chops, ½ teaspoon sea salt, ½ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme, 1 teaspoon olive oil
- Heat a large skillet over medium high heat.
- Sear pork chops on each side until golden brown. Depending on how thick your chops are, you might have to finish them in the oven.
- Cook until internal temperature is 155 to 160 degrees F.
For chimichurri sauce:
- In food processer combine ½ cup Italian parsley, ½ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ½ teaspoon chili flakes, ½ teaspoon sea salt and ¾ cup olive oil for the chimichurri and blend well. Incorporate olive oil ¼ cup at a time.½ cup Italian parsley, ½ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ½ teaspoon chili flakes, ½ teaspoon sea salt, ¾ cup olive oil
