Ingredients

For pork chops

  • 2 bone-in pork chops 10 to 12 ounces each
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon parsley chopped
  • 1 teaspoon thyme chopped
  • 1 teaspoon olive oil

For chimichurri Sauce

  • ½ cup Italian parsley
  • ½ cup cilantro
  • 2 tablespoons onion chopped
  • 2 garlic cloves
  • 2 tablespoons red wine vinegar
  • ½ teaspoon chili flakes
  • ½ teaspoon sea salt
  • ¾ cup olive oil

Instructions

For pork chops:

  • Season 2 bone-in pork chops on both sides with ½ teaspoon sea salt, ½ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme and 1 teaspoon olive oil. Set aside.

  • Heat a large skillet over medium high heat.
  • Sear pork chops on each side until golden brown. Depending on how thick your chops are, you might have to finish them in the oven.
  • Cook until internal temperature is 155 to 160 degrees F.

For chimichurri sauce:

  • In food processer combine ½ cup Italian parsley, ½ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ½ teaspoon chili flakes, ½ teaspoon sea salt and ¾ cup olive oil for the chimichurri and blend well. Incorporate olive oil ¼ cup at a time.
