Preheat oven to 325 degrees F / 162 degrees C. Line baking tray with parchment paper.

Cook 4 ounces bacon in the oven for 12 to 18 minutes, until crispy, and place on paper towels to drain grease. Chop and set aside.

In a medium-sized bowl, combine ¼ cup ghee, 2 eggs, 2 tablespoons mayonnaise, ¼ tsp sea salt and 1 pinch black pepper.

With a fork, mash all the ingredients in the bowl together.

Place in a refrigerator for up to 2 hours to achieve a scoopable consistency.

With a 1-ounce cookie scoop, scoop refrigerated mixture into balls and roll them in the chopped bacon. Serve and enjoy!
