Combine ½ cup almond butter, 6 ounces cream cheese, 2 tablespoons coconut oil, 1/8 cup monk fruit sweetener and ½ teaspoon vanilla extract, mixing to make a dough.

Pour 1 cup pine nuts into a bowl.

Portion dough into 9 equal balls, about 2 Tbsp each, and drop into the bowl with the nuts.

Roll balls around in the nuts until each one is covered with pine nuts.

Use remaining nuts as a garnish if desired.
