We constantly hear that people miss having mac and cheese. Who doesn’t love mac and cheese? This keto-friendly mac and cheese has a fantastic texture—it’s really just like mac and cheese. Ingredients
1 large head cauliflower, cut into small florets
Kosher salt, as needed, plus 1/2 teaspoon
Olive oil
1 cup heavy cream
2 ounces cream cheese, cut into small pieces
1 1/2 cups shredded cheddar, plus 1/2 cup more
1 1/2 teaspoon Dijon mustard
1/8 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
Cooking Directions
Preheat the oven to 375 degrees. Bring a large pot of water with some salt, to a boil.
Grease an 8x8 baking dish with oil
Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat dry. Add cauliflower to baking dish
In a small saucepan, add the cream and heat on medium until simmering.
Whisk in the cream cheese and mustard until smooth
Stir in the 1 1/2 cup of cheese, salt, pepper and garlic and mix until the cheese melts.
Remove from heat and pour over cauliflower.
Top with remaining ½ cup of cheese.
Place in the oven for around 15-20 minutes, until browned lightly on top and the cheese is bubbling.
