Ingredients

  • 1 cup cauliflower florets
  • 1 tablespoon coconut oil
  • 1 tablespoon fresh garlic minced
  • ¼ cup onions chopped
  • ¼ cup carrots diced
  • 2 tablespoons coconut aminos
  • 1 tablespoon sesame seeds
  • 2 scallions chopped

Instructions

  • In a food processor or blender, grind down 1 cup cauliflower in small batches until rice-like texture.

  • Melt 1 tablespoon coconut oil in pan over medium heat.  Add 1 tablespoon fresh garlic and ¼ cup onions and cook for about 5 minutes.

  • Add ¼ cup carrots and cook for another 2 to 3 minutes.

  • Add cauliflower, cooking for additional 4 minutes over medium heat, while stirring occasionally. 
  • Add 2 tablespoons coconut aminos and garnish with 1 tablespoon sesame seeds and 2 scallions.

Cauliflower has so many purposes to the ketogenic community.  It can be used as a substitute for rice.  You can either grind it up in a blender/food processor or it’s becoming more popular that you might be able to find it in the frozen food aisle at your local market.
