Instructions
- Preheat oven to 400 degrees F / 204 degrees C.
- In bowl, combine ¼ cup olive oil , ½ teaspoon onion powder, ½ teaspoon garlic powder, 1 pinch sea salt and 1 pinch pepper. Mix well. Add 1 pound eggplant and toss to coat.
- Coat baking sheet with olive oil cooking spray. Arrange eggplant on baking sheet in even layer. Bake for 25 to 30 minutes or until golden brown.
- Serve warm and enjoy!
