  • ½ cup frozen spinach defrosted
  • 2 heads broccoli steamed and finely chopped
  • ¼ cup scallions chopped
  • 1 cup cheddar cheese shredded
  • ¼ cup Parmesan cheese shredded
  • ½ cup sour cream
  • 1 teaspoon dried thyme
  • ¼ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 eggs large

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In mixing bowl, combine ½ cup frozen spinach, 2 heads broccoli, ¼ cup scallions, 1 cup cheddar cheese, ¼ cup Parmesan cheese, ½ cup sour cream, 1 teaspoon dried thyme, ¼ teaspoon sea salt, ½ teaspoon black pepper, and 2 eggs and mix until fully incorporated.
    ½ cup frozen spinach, 2 heads broccoli, ¼ cup scallions, 1 cup cheddar cheese, ¼ cup Parmesan cheese, ½ cup sour cream, 1 teaspoon dried thyme, ¼ teaspoon sea salt, ½ teaspoon black pepper, 2 eggs
  • Press mixture into 11 x 7-inch casserole dish.
  • Bake for 25 minutes until golden brown.
  • Let cool, cut into 24 squares.
  • Serve and enjoy.
