Ingredients

  • ½ cup frozen spinach defrosted
  • 2 heads broccoli steamed, chopped
  • ¼ cup scallions chopped
  • 1 cup cheddar cheese grated
  • ¼ cup Parmesan cheese grated
  • 2 eggs large
  • ½ cup sour cream
  • 1 teaspoon dried thyme
  • ¼ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In mixing bowl, combine ½ cup frozen spinach, 2 heads broccoli, ¼ cup scallions, 1 cup cheddar cheese, ¼ cup Parmesan cheese, 2 eggs, ½ cup sour cream, 1 teaspoon dried thyme, ¼ teaspoon sea salt and ½ teaspoon black pepper. Mix until fully incorporated.
    ½ cup frozen spinach, 2 heads broccoli, ¼ cup scallions, 1 cup cheddar cheese, ¼ cup Parmesan cheese, ½ cup sour cream, 1 teaspoon dried thyme, ¼ teaspoon sea salt, ½ teaspoon black pepper, 2 eggs
  • Press mixture into 11 x 7-inch casserole dish.
  • Bake for 25 minutes until golden brown.
  • Let cool, cut into 24 squares.
