For pork chops

  • 2 bone-in pork chops 10 to 12 ounces each

  • ยฝ teaspoon black pepper
  • 1 teaspoon parsley chopped
  • 1 teaspoon thyme chopped
  • 1 teaspoon olive oil

Juicy pork chops are seared to a golden crust and paired with a vibrant, herb-packed chimichurri sauce for a zesty, fresh finish. This Keto Pan Seared Pork Chop with Chimichurri turns a simple protein into a gourmet-style meal.

Instructions

For chimichurri sauce:

  • In food processer combine ยฝ cup Italian parsley, ยฝ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ยฝ teaspoon chili flakes, ยฝ teaspoon sea salt and ยพ cup olive oil for chimichurri and blend well. Incorporate olive oil ยผ cup at a time.
    ยฝ cup Italian parsley, ยฝ cup cilantro, 2 tablespoons onion, 2 garlic cloves, 2 tablespoons red wine vinegar, ยฝ teaspoon chili flakes, ยฝ teaspoon sea salt, ยพ cup olive oil

For pork chops:

  • Season 2 bone-in pork chops on both sides with ยฝ teaspoon sea salt, ยฝ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme and 1 teaspoon olive oil. Set aside.
    2 bone-in pork chops, ยฝ teaspoon sea salt, ยฝ teaspoon black pepper, 1 teaspoon parsley, 1 teaspoon thyme, 1 teaspoon olive oil
  • Heat large skillet over medium-high heat.
  • Sear pork chops on each side until golden brown. Depending on thickness of chops, you might have to finish in oven.
  • Cook until internal temperature is 160 degrees F / 71 degrees C.
  • Serve with your favorite low-carb sides and enjoy!
