Ingredients

  • ½ cup mozzarella cheese shredded
  • 1 ounce cream cheese
  • ½ cup almond flour
  • 2 teaspoons psyllium husk
  • 1 egg large
  • 2 sausages large, grass-fed

Instructions

  • Preheat oven to 350 degrees / 204 degrees F.
  • In a bowl, combine ½ cup mozzarella cheese and 1 ounce cream cheese.
  • Melt down and mix well.
  • In a separate bowl, mix ½ cup almond flour and 2 teaspoons psyllium husk.
  • Add 1 egg, beaten, to the cheese mixture (make sure that your cheese mixture is not hot, you don’t want to cook the egg with residual heat).
  • Add the almond flour and psyllium husk mixture to the cheese and egg mixture and combine to form a dough.
  • Knead the dough. Refrigerate for 10 minutes – this will make it easier to work with.
  • Roll out the dough about ¼ inch thick on parchment paper or silicone baking mat with some extra almond flour to avoid sticking.
  • If you are using a silicone baking mat, use a non-sharp object to cut 1½ inch thick strips.
  • Roll and wrap 2 sausages.
  • Bake for 25 to 30 minutes.
