Preheat oven to 350 degrees / 204 degrees F.

In a bowl, combine ½ cup mozzarella cheese and 1 ounce cream cheese.

Melt down and mix well.

In a separate bowl, mix ½ cup almond flour and 2 teaspoons psyllium husk.

Add 1 egg, beaten, to the cheese mixture (make sure that your cheese mixture is not hot, you don’t want to cook the egg with residual heat).

Add the almond flour and psyllium husk mixture to the cheese and egg mixture and combine to form a dough.

Knead the dough. Refrigerate for 10 minutes – this will make it easier to work with.

Roll out the dough about ¼ inch thick on parchment paper or silicone baking mat with some extra almond flour to avoid sticking.

If you are using a silicone baking mat, use a non-sharp object to cut 1½ inch thick strips.

Roll and wrap 2 sausages.

Bake for 25 to 30 minutes.
