Preheat oven to 350 degrees F / 177 degrees C.
In bowl, combine ½ cup mozzarella cheese and 1 ounce cream cheese.

Melt down and mix well.
In separate bowl, mix ½ cup almond flour and 2 teaspoons psyllium husk.

Add 1 egg, beaten, to cheese mixture. Make sure cheese mixture isn't hot, to avoid cooking egg.

Add almond flour mixture to cheese and egg. Combine to form dough.
Knead dough and refrigerate for 10 minutes.
Roll out dough about ¼ inch thick on parchment paper or silicone baking mat with extra almond flour to avoid sticking.
Use non-sharp object to cut 1½ inch thick strips.
Roll and wrap 2 sausages.

Bake for 25 to 30 minutes.
Serve with Dijon mustard and enjoy!
