Ingredients

Sauce

  • 3 ounces ground beef
  • ½ tablespoon butter
  • 2 tablespoons onion chopped
  • 1 clove garlic minced
  • ½ cup mushrooms sliced
  • 2 tablespoons heavy cream

Zoodles

  • 1 zucchini medium, zoodled
  • ½ tablespoon butter
  • 1 clove garlic minced
  • 2 ounces Parmesan cheese finely shredded

Instructions

Sauce

  • Brown 3 ounces ground beef in a skillet over medium heat for 10 to 15 minutes, until fully cooked. Remove beef and set aside

  • Reduce skillet heat to medium-low. Cook 2 tablespoons onion, 1 clove garlic, and ½ tablespoon butter over medium-low heat for 10 minutes.

  • Stir in ½ cup mushrooms and cooked beef. Cook for 10 more minutes.

  • Lower heat and stir in 2 tablespoons heavy cream. Simmer for 5 minutes.

Zoodles

  • In a separate pan over low heat, melt ½ tablespoon butter and add 1 clove garlic. Add 1 zucchini zoodles and cook to desired texture.

  • Place cooked zoodles in a bowl. Top with beef and mushroom sauce. Garnish with 2 ounces Parmesan cheese.

This garlic, onion, cream, and butter sauce is light and tasty!   The beef and mushrooms give it a stroganoff taste.  It also uses “noodles” made from zucchini.
