Cauliflower Wraps

Cauliflower Wraps

Ok I never thought these would work but they DO!  And the uses are limitless- Tacos, sandwiches.  Crepes, etc.

 

Ingredients:

½ head of cauliflower or 2 cups of riced cauliflower

¼ tsp salt

1 clove of minced garlic

Herbs of your choice ( I love Italian)

 

Directions:

Preheat oven to 375 F.  Line two baking sheets with parchment or baking sheets.  In food processor, pulse cauliflower in til crumbled (if using riced, of course skip this).  Steam cauliflower for 8 min.

Pour steamed cauliflower in a dishtowel and drain, squeeze and press to pull out water.  Put in a bowl and add other ingredients. 

Pour about ¼ cup of mix onto the baking sheet and spread into a thin circle.  Not so thin that you can see the parchment or baking sheet.  I used a ladle and spread it in circles, like pizza sauce on a pizza, to spread out the mixture in a wide circle.  My batch made 4 wraps, 2 on each baking sheet. 

Bake for 15-17 minutes, or until dry and pliable.  Using a thin spatula, pull of the baking sheet and put onto a rake to cool.

These wraps are soft, pliable and don’t break apart.  Be creative, use them however you want.  I think they are GREAT.
