Keto Tex-Mex Casserole
Per serving: 850 calories, 50 g protein, 8 g carbohydrates, 66 g fat
TOTAL TIME: 45 minutes
- 1/3 cup / 88 mL butter
- 1½ lbs / 710 mL ground beef
- 3 Tbsp / 27 mL Tex-Mex seasoning
- 1 cup / 240 mL tomatoes, crushed
- salt and pepper to taste
- ¼ cup / 82 mL pickled jalapenos
- 1/3 cup / 475 mL cheddar cheese, shredded
Preheat the oven to 375 degrees F / 190 degrees C.
In a pan, fry the ground beef in butter on medium heat. Add Tex-Mex seasoning.
Stir and let mixture come to a simmer. Allow beef to be cooked through till no longer pink. Add crushed tomatoes. Add salt and pepper to taste.
Remove from heat and place in a greased baking dish. Top with jalapenos and cheese.
Bake for 15 to 20 minutes or until golden brown.
Serve with desired toppings or as-is.
