Keto Popcorn Chicken

TOTAL TIME: 25 minutes
SERVES: 4

INGREDIENTS:

Popcorn Chicken

  • 1 lb boneless skinless chicken breast
  • 1½ cups buttermilk
  • 1 tsp chili powder
  • 4 cups keto cereal, crushed
  • ½ cup almond flour 
  • ½ cup almond slivers
  • 1/8 tsp black pepper
  • ½ tsp sea salt

 

Chipotle mayo

  • ½ cup mayonnaise 
  • 1 tsp tomato paste
  • 1 oz lemon juice
  • ¼ tsp of chipotle powder
  • 1/8 tsp sea salt
  • 1/8 tsp garlic powder

DIRECTIONS:

  1. Preheat oven to 400 degrees F.

  2. Season chicken with chili powder and place in a large bowl with buttermilk. Marinate for 2 hours.

  3. Prepare the breading by combining keto cereal, almond flour, almond slivers, salt and pepper in a large bowl. Mix well.

  4. Remove chicken from marinade. Place in large bowl with breading and coat well.

  5. Place breaded chicken pieces on a wire rack and bake for 15 minutes.

  6. While chicken is baking, in a medium bowl combine all ingredients for chipotle mayo and mix well.

  7. Remove chicken from oven and enjoy with chipotle mayo as dipping sauce.
