Keto Popcorn Chicken

- 1 lb boneless skinless chicken breast
- 1½ cups buttermilk
- 1 tsp chili powder
- 4 cups keto cereal, crushed
- ½ cup almond flour
- ½ cup almond slivers
- 1/8 tsp black pepper
- ½ tsp sea salt
- ½ cup mayonnaise
- 1 tsp tomato paste
- 1 oz lemon juice
- ¼ tsp of chipotle powder
- 1/8 tsp sea salt
- 1/8 tsp garlic powder
Preheat oven to 400 degrees F.
Season chicken with chili powder and place in a large bowl with buttermilk. Marinate for 2 hours.
Prepare the breading by combining keto cereal, almond flour, almond slivers, salt and pepper in a large bowl. Mix well.
Remove chicken from marinade. Place in large bowl with breading and coat well.
Place breaded chicken pieces on a wire rack and bake for 15 minutes.
While chicken is baking, in a medium bowl combine all ingredients for chipotle mayo and mix well.
Remove chicken from oven and enjoy with chipotle mayo as dipping sauce.
