Keto Cobb Salad with Ranch Dressing

TOTAL TIME: 30 minutes
SERVES: 4

INGREDIENTS:

Ranch dressing

¼ cup sour cream

½ cup mayonnaise 

½ lemon, juice of

2 Tbsp fresh parsley

2 Tbsp scallions 

1 Tbsp dried dill

1 tsp garlic powder

½ tsp sea salt

¼ tsp black pepper

¼ cup heavy cream

 

Cobb salad

2 cups romaine lettuce, chopped

1/3 cup scallions, chopped

2/3 cup cherry tomatoes

2 avocados, pitted and diced

3 hard boiled eggs, chopped

1/3 cup blue cheese, crumbled

2 cups chicken breast, cooked and chopped

6 slices bacon, chopped

DIRECTIONS:

  1. Combine all ingredients for the dressing in a medium mixing bowl,  whisk together and set aside.

  2. In a large bowl make a bed of the romaine lettuce. 

  3. Arrange all ingredients for the salad on top of the bed of lettuce.

  4. Spoon ranch dressing on top of the salad and enjoy.
