Keto Popcorn Chicken

TOTAL TIME: 35 minutes + 24 hours refrigerator time
SERVES: 4

INGREDIENTS:

  • 1 lb / .45 kg boneless, skinless chicken breasts

  • 1 cup / 236.6 mL heavy cream

  • ¼ cup / 60 mL coconut flour

  • ¼ tsp / 1.25 mL sea salt 

  • 1/8 tsp / .6 mL ground black pepper

  • 1 large egg

  • 2 cups / 473 mL crushed pork rinds 

  • 1 tsp / 5 mL onion powder

  • ½ tsp / 2.5 mL garlic powder 

  • ½ tsp / 2.5 mL smoked paprika

DIRECTIONS:

The Night Before

  1. Put the cut up chicken in a bowl, pour the heavy cream over it, cover and refrigerate for 24 hours.

The Next Day

  1. Preheat the oven to 425 F / 220 C. Line a rimmed baking sheet with parchment or a silicone baking mat.

  2. Set up three shallow bowls. In the first bowl, combine the coconut flour, salt, and pepper. Crack egg into the second bowl and fork whisk it. In the third bowl, mix together pork rinds, onion powder, garlic powder and paprika.

  3. Follow this three-step process with each piece of chicken: Dredge in coconut flour, coat in egg wash, and then coat in the pork rind breading. Place breaded pieces in a single layer on the prepared baking sheet.

  4. Work in batches if you slice smaller chicken pieces.

  5. Refill coating stations if needed.

  6. Bake for 20 minutes, checking often, or until golden brown and crispy.
