Keto Creamy Coconut Pudding
Per serving: 105 calories, 1 g protein, 8 g carbohydrates, 10 g fat
TOTAL TIME: 2 hours, including 1 hour 30 minutes cooling time
- 1 cup / 230 mL plain unsweetened coconut milk
- ½ tsp salt
- 1 Tbsp Swerve
- 3/4 cup / 70 mL heavy cream
- ½ tsp vanilla extract
- 1 tsp coconut extract
- 1 Tbsp arrowroot powder, plus 1 Tbsp water
- ¼ cup / 70 g coconut yogurt
- 1 Tbsp fresh blueberries for garnish
Mix coconut milk, salt, Swerve, heavy cream, vanilla and coconut extract in medium pot. Whisk to combine.
Turn heat to medium-high and continue mixing until the mixture simmers.
Add arrowroot to a small ramekin with water to hydrate. Mix together.
Turn heat up slightly on coconut milk mixture and add arrowroot mixture. Reduce heat to low and whisk until liquid is thickened, about 3 minutes.
Strain liquid through a fine strainer to remove any uncooked thickener.
Refrigerate strained mixture for 30 minutes. Stir in yogurt and chill for 1 hour.
Garnish with fresh blueberries. Enjoy.
