Keto Chicken Coconut Curry Recipe

KETO CHICKEN COCONUT CURRY

 

This keto coconut curry chicken is so good it tastes like it's from a restaurant, but it's healthy and keto-friendly.  It's like healthy comfort food. You're going to love it. This recipe has lots of tasty veggies that will give you some nutrients, and fiber that will even boost your energy.  

We hope you enjoy this delicious recipe for keto coconut curry chicken.

 

Ingredients:

  • 1½ lbs organic chicken thighs 

  • ½ cup of each: roughly chopped bell peppers, onions, and zucchini

  • 4 tsp curry powder 

  • 3 Tbsp coconut oil 

  • 1 tsp paprika 

  • 1 14-oz can coconut milk 

  • 1 tsp garlic paste

  • 1 tsp ginger paste 

  • 1 tsp salt 

  • 1 Tbsp tomato paste 

  • Chopped cilantro (optional) 

 

Instructions:

Melt coconut oil in a large pan over low heat and add the spices, ginger and garlic paste.

Cook on low for a few minutes.

Add tomato paste, coconut milk, salt and chicken to the pan and cook on medium-high heat for 5 minutes. 

Add vegetables and simmer on medium-low heat for 25 minutes.

Top with cilantro and enjoy!
