Fresh and Easy Keto Jerk Catfish

FRESH AND EASY JERK CATFISH

This is a fantastic fish dish (you might even call it a delish fish dish). The jerk seasoning makes this keto recipe a little spicy, but it's not overbearing. The fish is on a medley of light vegetables with drizzled lime. It's a beautiful and super tasty dish that makes a fantastic meal. If you don't have catfish on hand, you can use any white fish that won't easily fall apart. You can also mix up what kind of greens you use as well. Add your favorites! This is a great recipe to mix things up and add some variety in your diet. It's a fast, fresh, and easy recipe that's, of course, keto-friendly. You're going to love it!

Ingredients:

  • 2 Tbsp jerk seasoning 

  • 2 Tbsp olive oil

  • 2 catfish fillets

  • 2 cups watercress

  • 8 oz peas

  • 1 cup okra, cut lengthwise

  • 2 medium tomatoes, chopped

  • 1½ Tbsp lime juice, mixed with a pinch of seasoning and 1 tsp olive oil

Instructions: 

Heat a pan to medium heat with 1½ Tbsp olive oil.

Coat the catfish with ½ Tbsp olive oil and the jerk seasoning. Leave a little pinch of the seasoning for the lime juice dressing. 

Fry catfish on both sides for about 4 minutes per side. Set fish aside. 

In the same pan, fry the okra until browned and then add the peas. Cook for about 7 minutes covered. 

Meanwhile, chop the watercress and tomatoes and make the lime juice dressing. 

In a large bowl, add all the vegetables and toss with the lime dressing.

Top with catfish and enjoy!
