Keto Pistachio-Crusted Chicken

TOTAL TIME: 3 hours and 25 minutes
SERVES: 4

INGREDIENTS:

  • 2 boneless chicken breasts, sliced in half
  • sea salt and pepper to taste
  • 1 large egg (white only)
  • 1 cup / 125 g unsalted pistachios, chopped 
  • 3 Tbsp olive oil
  • optional: chopped fresh parsley for garnish

DIRECTIONS:

  1. Preheat oven to 400 degrees F / 204 degrees C. 

  2. In a bowl, sprinkle salt and pepper onto chicken breasts. 

  3. Dip chicken into egg, and then coat with chopped pistachios, pressing lightly to adhere. Repeat until all chicken is coated. 

  4. In an oven-safe skillet, heat oil over medium-high heat. Add chicken to the pan and cook for 5 minutes on each side. 

  5. Remove chicken from heat and put skillet into oven to bake for 10 to 15 minutes. Top with chopped fresh parsley for serving, if desired, and enjoy!
