Keto “Oatmeal” Chocolate Chip Cookies

- 1 cup / 71 g shredded coconut
- 3/4 cup / 109 g sliced almonds
- 1 cup / 96 g almond flour
- ½ cup / 48 g coconut flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- ½ cup / 115 grams butter, softened
- ½ cup / 101 g erythritol sugar
- 1 large egg
- ½ tsp vanilla
- ¼ cup / 40 g dark chocolate chips
- ¼ cup / 33 g unsweetened dried cranberries
Preheat oven to 325 degrees F / 163 degrees C.
In a large bowl, combine shredded coconut, almonds, almond flour, coconut flour, baking powder, cinnamon, and salt. Mix well.
In another bowl, mix butter with sweetener. Add egg and vanilla and mix until you get a creamy consistency. Add dry ingredients to this bowl and mix well. Stir in chocolate chips and cranberries.
Coat a baking sheet with oil. Scoop dough in balls and place evenly on sheet until all dough is used.
Bake cookies for 15 to 20 minutes or until golden brown around the edges. Remove and allow to cool at room temperature before enjoying.
