Savory Mediterranean Keto Fat Bombs
Per serving: Calories 164, Protein 4 g, Carbohydrates 2 g, Fat 17 g
TOTAL TIME: 20 minutes
- ¼ cup melted ghee
- ½ cup cream cheese, room temperature (soft)
- 3 Tbsp fresh oregano, chopped, or 3 tsp dried herbs
- 1 oz kalamata olives, drained and chopped
- 1 oz sundried tomatoes, drained and chopped
- 2 cloves garlic, chopped
- 10 Tbsp Parmesan cheese, grated
- ¼ tsp sea salt
- Pinch ground black pepper
Put all ingredients in a medium mixing bowl except for 5 tablespoons of Parmesan cheese; reserve that to roll the fat bombs in.
Refrigerate for 2 hours until the mixture becomes hard.
With a 1-ounce cookie scoop, scoop 12 balls. Make them uniform by rolling them with your hands.
Roll each ball in the remaining Parmesan and serve.
Best to keep refrigerated at all times to retain texture.
