Keto Zucchini Fritters

TOTAL TIME: 15 minutes


  • 3 medium zucchini, shredded
  • 1 tsp / 5 mL sea salt
  • 2 large eggs
  • ¼ cup / 60 mL feta, crumbled 
  • ¼ cup / 60 mL mozzarella, shredded 
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • ¼ tsp / 1.2 mL each -- ground black pepper, chili powder, garlic powder (to taste)
  • ½ cup / 118.3 mL almond flour
  • 1 Tbsp / 15 mL butter


  1. In a large bowl, combine shredded zucchini and salt; set aside for 10 minutes. After ten minutes drain water from the zucchini by squeezing it with your hand and discarding liquid.

  2. In another bowl, whisk eggs and shredded zucchini, feta, mozzarella, garlic, green onions and black pepper. 

  3. Stir in almond flour until fully combined.

  4. Preheat a large skillet to medium-high heat. Add butter. Using an ice cream scoop or large spoon, scoop one spoonful of batter into the pan for each fritter, enough to cook 3 fritters at a time. Cook 2 to 3 minutes per side until golden, crispy and cooked through. Top with chili powder and garlic powder. Transfer to a plate or pan and repeat.
