Keto Dijon Chicken Breast

TOTAL TIME: 35 minutes
- 1 lb chicken breast
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 Tbsp olive oil
- 2 cloves garlic, chopped
- ½ cup chicken broth
- 2/3 cup heavy cream
- 1 Tbsp fresh thyme, chopped
- 2 Tbsp whole grain mustard
- 2 Tbsp fresh parsley
- 1 cup baby arugula
Preheat oven to 350 degrees F.
Season chicken breasts with salt and pepper; set aside.
Heat skillet over medium high heat and add olive oil.
Sear chicken breasts on both sides, remove from skillet and set aside.
Add garlic to pan, then deglaze pan with chicken broth.
Add heavy cream, fresh thyme, and whole grain mustard. Add chicken back to pan, place in oven and bake for 6 to 8 minutes.
Remove chicken from oven and slice meat.
Place chicken over a bed of arugula and spoon sauce over the top. Garnish with parsley and enjoy.
