Keto Beef and Cauliflower Rice Soup
This soup is like Beef Barley, but it uses cauliflower rice as a barley substitute!
TOTAL TIME: 45 mins
Stew Beef - 3-6 oz (make 1 pound ahead of time in a crock pot, you can use the additional beef for other things throughout the week!)
Cauliflower Rice - 1 cup (you should be able to buy this at your local grocery store)
Safflower Oil - 1 1/2 tablespoons
Onion - 1/4 medium
Carrot - 2 small or 1 large
Celery - 2 stalks
Beef Broth - 2 cups
For Stew Beef:
Cook with onions and celery in a slow cooker on high for 4-6 hours.
Add oil, onion, carrot, celery. On medium-low heat, cook veggies for about 10 minutes. The purpose of this step is to bring out all of the flavors. This step is called “sweating” the vegetables.
Add cauliflower rice, cook on medium heat, while stirring, for 2-3 minutes.
Add broth and meat. Let simmer for 20 minutes.
Garnish with parsley! Serve with a big salad!
