Green Chile and Bacon Cauliflower Tots
Per serving: Calories 205, Protein 12 g, Carbohydrates 8 g, Fat 14 g
TOTAL TIME: 45 minutes
2 large eggs
1 cup shredded cheddar
¾ cup almond meal
2 Tbsp pickled jalapenos, chopped
¼ cup green chilis, chopped
¼ cup bacon, cooked
2 cloves garlic, chopped
1 tsp sea salt
½ tsp black pepper
2½ cups cauliflower, riced and steamed
Preheat oven to 400 degrees F. Grease small muffin pan. Silicone molds work best.
In a large bowl combine all ingredients and mix well.
Spoon mixture into the muffin tins.
Make sure to press mixture into the muffin tins, packing each one well.
Bake for 20 to 25 minutes.
Allow to cool before removing from the muffin pans. You can garnish with more sour cream and pickled jalapenos.
